My son and I went fishing, and he caught a nice Cobia :

We then took the small boat back to the mainland, rode up to Belize City and took a bigger boat shuttle to the tourist island of Caye Caulker, where we hand fed the tarpons:

We released the Cuda but kept the Grouper. We had it two ways, grilled “a la plancha” and in a curry sauce. Both ways were some of, if not the best fish I’ve ever eaten.

Belize is a small country, about 8,900 sq. miles, but is B I G on adventure. The population is only 408,000 people, comprised of Mestizos, Mayans, Garifuna, Creole, Ex-Pats and surprisingly; Mennonites. Every local we met was super friendly and helpful. And while the food is neither fancy nor complicated (a lot of rice and beans), everything we ate was fresh, delicious and (mostly) healthy.

Yeah, the Mayan ruins, scuba diving and snorkeling are world class. And laying in a hammock, drinking Belikins ain't bad either.
